This is my mum's recipe. Pat is the best chef I know. This is moist and delicious.
Ingredients :
- 1 cup Greek yoghurt
- 1 cup sugar
- 1 tsp vanilla essence
- 3 egg lightly beaten
- 1 lemon juiced zested
- 1/2 cup vegetable oil
- 1 1/2 cup self-raising flour
- 1/2 tsp salt
- 1 tsp baking powder
LEMON SYRUP
- 1/3 cup lemon juice
- 1/3 cup sugar
Method :
- Whisk yoghurt, sugar, essence, eggs, lemon zest and juice in a bowl.
- Add the vegetable oil and whisk again well.
- In another bowl, stir together the sifted flour, salt and baking powder. Add this to the wet ingredients. Stir to blend.
- Place in greased cake tin and bake at 180C for approximately 40 minutes. Allow to cool.
- Lemon syrup: Dissolve lemon juice and sugar in a pot over low heat, stirring until sugar has dissolved.
- Pour syrup over cake.
